Welcome to my table! Grab a cup of coffee or your favorite drink and take a moment to sit and visit with me. I’d like to share about what will be happening this month ☕️
New this month:
Starting this month a new once a month, heart to heart letter called Coffee Time Chats will be sent out. This is an informal, intimate conversation between me and each of you.
It will be a time of gathering together, just us, over a cup of coffee for a heart-to-heart conversation about what is going on and how some strategic choices to everyday life may help.
God’s Peace
“Peace I leave with you; my peace I give you. I do not give to you as the world gives. Do not let your hearts be troubled and do not be afraid.” (John 14:27 [Life Application Study Bible])
When Jesus tells us something we can believe it to be the truth. That is why we believe all the Bible, not just parts of it. In this verse we see his promise of divine, heavenly peace, not the temporary peace of this world.
When we are willing to accept the Holy Spirit into our lives we receive this heavenly peace that fills our hearts and minds if we are willing to allow that peace to replace the world’s noise.
The circumstance we do not need to fear, doubt, or despair because the Holy Spirit,
the peace of God, restrains these thoughts and offers us comfort in their place.
Philippians 4:6-7 supports this, “Do not be anxious about anything, but in every situation, by prayer and petition, with thanksgiving, present your requests to God. And the peace of God, which transcends all understanding, will guard your hearts and minds in Christ Jesus.” (Life Application Study Bible)
Let’s bring this home, we can receive God’s peace when we:
- Accept the Holy Spirit into our lives
- Believe in God’s promise
- Call on his peace and be thankful for it, knowing we will receive it
Decide to Think about God’s word, not the circumstance.

his month I would like to focus on our mental health and how the role of nutrition, from God’s perspective, is able to aid in the reduction of our anxiety and daily stressors.
According to the Florida Health Charts (https://www.flhealthcharts.gov) 1,341 people died by suicide between the months of January and May of this year in the state of Florida.
The rippling effect of death by suicide is so much greater than this figure indicates. Families, friends, co-workers, communities, and churches are struggling with the aftermath of people that die by suicide.

Recipe Corner: Watermelon Cooler
This month’s recipe is a delicious family favorite and a power tool food to reduce anxiety and stress. Salmon is a rich source of Omega-3s. It is also a part of the Mediterranean Diet!
Salmon Teriyaki
Recipe provided by Eric Click
Ingredients
- 3 oz salmon fillet per person
- 1 large Ziplock bag
Ingredients for Teriyaki sauce:
- 1 Tbs. minced garlic
- 1 Tbs. orange rind
- ¼ cup sherry
- ¼ tsp black pepper
- 1 Tbs. Fresh grated ginger
- 2 Bay leaves
2/3 cup Soy Sauce
- 1 Tablespoon brown sugar
- ½ cup Olive oil
Directions
Place salmon into large Ziplock bag and set aside. Mix all teriyaki ingredients together and pour over salmon in Ziplock bag. Set in refrigerator for minimum of 4 hours or up to 24-hours.
To cook: Spray pan with non-stick spray and place salmon in pan, cook both sides 4-5 minutes or until center of salmon reaches an internal temperature of 145 degrees F.

Omega 3 essential fatty acids help to reduce our anxiety and stress. In addition, they provide energy for brain and body, protect our hearts, lungs, and immune systems.
Omega 3s play a role in the production of several hormones, including serotonin, our calming hormone.
3 oz of fresh or farm raised salmon provide a rich source of this amazing essential fatty acid. The Mediterranean Diet recommends at least two servings of fish a week.
Salmon can be purchased raw (sushi grade), fresh, frozen, canned, or dehydrated.
When purchasing fresh look that the eye is clear not cloudy, and the flesh is a vibrant pink.

- The FDA regulates the sale of all seafood including both domestic and imported
- Salmon is an excellent source of fish for moms-to-be and breastfeeding moms
- Salmon supports a child’s brain health and development
- Salmon is a part of a heart healthy diet
- There are Atlantic and Pacific species of salmon
- Atlantic salmon are born in the rivers of Maine and migrate to the Atlantic after 2-3 years
- Female salmon typically have 2,500 – 7,000 eggs
- Atlantic salmon are protected under the Endangered Species Act (ESA)
- Fresh salmon sold in stores is typically Pacific salmon
- Atlantic salmon sold in stores is typically farm raised

Family Nutrition Tip
How we get kiddos to eat more fish? 🎣 Make it kid friendly!
If possible take kids fishing, the fresh air, time spent with you, laughter, and the experience of casting and catching fish will help them to understand where this amazing food source comes from.
Next, add sauces and dips such as tartar sauce, ketchup, and salsa. Sauces and dips helps to reduce the new food flavor and anxiety surrounding a new food.
Finally, white fish tend to have less “fishy” flavor then pink fatty fish such as salmon. Starting with a cod or other more subdued flavored fish may be the place to start.
Fish sticks with ketchup, mac and cheese and green beans was a favorite meal of Pauline’s as a kiddo 😊
