Blessed Bites: Do you feel this way too?

When I was in high school, I struggled with an eating disorder that almost took my life. I had no self-esteem and certainly didn’t love myself.

I really needed someone to remind me that I wasn’t alone, that I was enough just as I was, and that God was so much bigger than my anxiety and fears.

If you’re feeling the same way, take a look at Isaiah 41:10—it’s such a beautiful verse of reassurance! You’re not alone in this, and we can lean on His strength together.

“Don’t be afraid, for I am with you. Don’t be discouraged, for I am your God. I will strengthen you and help you. I will hold you up with my victorious right hand.” Isaiah 41:10 KJV

So where’s the nutrition?

That’s a great question! God intentionally designed certain foods to help lower our anxiety and stress through the nutrition they provide. Complex (whole) grains are some of those foods! 

Some very simple ways to begin increasing complex grains into your family’s day are:

  1. Whole grain crackers
  2. Cereals that are made from whole grains (watch granolas, they can be high in added sugars)
  3. Popcorn – Yup, it’s a whole grain!
  4. Brown rice
  5. Brown rice pasta – honestly, it’s delish and gluten free!
  6. Whole grain wraps
  7. Sun Chips instead of potato or veggie chips
  8. Whole grain (100%) breads
  9. Whole wheat bagels
  10. Quinoa

Crock Pot Brown Rice Pudding

Ingredients

  • 2 very ripe bananas
  • 3/4 c. uncooked brown rice, rinsed
  • 1 8 oz nutritional shake (I like Orgain vanilla)
  • 2 cup light coconut milk
  • 1/3 c. plant-based spread
    • 1-1½ c. raisins (opt.)

Directions

Cover and cook on High for 2 ½-3 hours

Spray crock pot with non-stick spray

Add ingredients in order listed above

Quips & Tips

Charcuterie boards are a fun way to introduce more whole grains into your meals! You can try a mix of whole grain crackers and breads, paired with cheeses, fruits, veggies, and even some olive oil.

Prince Charming and I are all about whole grain crackers with fig jam, cucumber slices, and Swiss cheese. I also can’t resist baked Brie with a drizzle of olive oil on warm whole grain bread—so good! 

Put together a board with your family’s favorites and throw in a few new whole grain options. It’s an easy way to add more whole grains to your diet!

Fun Facts About Whole Grains

  1. Ruth gleaned whole grains in Boaz’s field (Ruth 2:15-18)
  2. Grains reconnected Joseph and his brothers (Genesis 42:1-2)
  3. According to the US Guidelines for Americans we should be consuming 50% of grains as whole grains
  4. Whole grains provide fiber, protein, Bcomplex, zinc, and magnesium
  5. 6 of the 12 ancient grains are gluten free
  6. Ancient grains are considered grains that have not changed in the past 100 years
