Recipe Corner

Pauline’s favorite gluten-free cookie recipe comes from and it’s for 3- ingredient peanut butter cookies, yum!

1 cup of peanut butter (either smooth or chunky)

1 cup white sugar

1 egg

Preheat oven to 350 degrees F. Mix ingredients together in a bowl until smooth and creamy. Roll into 1-inch balls and place on an ungreased baking sheet (Pauline likes to line the pan with parchment paper for easy clean up). Then flatten each cookie ball with the back of a fork dipped into white sugar making a crisscross pattern. Bake for about 10 minutes.

Family Recipe Tip

Dump and go meals are fantastic time savers! Pull out, dust off, and fall in love with the crockpot again. Lean meats, vegetables, and grains can all be “dumped” into the crockpot before leaving the house in the morning and while we work our dinner is slowly cooking to perfection!

Dump and go meals save time, hassle, boosts nutrition, and is easy on the wallet. I believe we call that a, “Winner, winner, chicken dinner!”

Thank you for sharing this time with us reading “Blessed Bites.” May each recipe, tip, and word of encouragement serve as a reminder of the beautiful interplay between faith, nutrition, and the abundant life God intends for us.

As you savor each bite and cherish each moment, remember that you are nourished not just by the food on your plate, but by the love and grace that surrounds you. Until we meet again in your inbox, may your days be filled with blessings, health, and a heart overflowing with joy.
