JRN’s website is also getting a healthy refresh. Over the next several months you will notice some amazing changes. Just a few to note will include self-paced courses, online payments, and monthly blogs/vlogs.

Recipe Corner

Pauline’s favorite gluten-free cookie recipe comes from allrecipes.com and it’s for 3- ingredient peanut butter cookies, yum!

Ingredients:

1 cup of peanut butter (either smooth or chunky)

1 cup white sugar

1 egg

Directions:

Preheat oven to 350 degrees F. Mix ingredients together in a bowl until smooth and creamy. Roll into 1-inch balls and place on an ungreased baking sheet (Pauline likes to line the pan with parchment paper for easy clean up). Then flatten each cookie ball with the back of a fork dipped into white sugar making a crisscross pattern. Bake for about 10 minutes.

  • Rich in vitamin C
  • Rich in vitamin B6 (pyridoxine)
  • Rich in fiber (skin of potato)
  • Wonderful food source for the microbiome
  • Great source of iron
  • Great source of phosphorus
  • Excellent source of potassium and magnesium
  • A main staple in Poland
  • Many of the nutrients are loss at high temperatures (frying & boiling)

Family Recipe Tip

Dump and go meals are fantastic time savers! Pull out, dust off, and fall in love with the crockpot again. Lean meats, vegetables, and grains can all be “dumped” into the crockpot before leaving the house in the morning and while we work our dinner is slowly cooking to perfection!

Dump and go meals save time, hassle, boosts nutrition, and is easy on the wallet. I believe we call that a, “Winner, winner, chicken dinner!”
